I very much like the NovaMind mind-mapping app (http://novamind.com/), which is now available for Windows as well. One huge feature, at least on the mac side, is a rich import/export capability, so I can often play with an idea in Novamind, and then export it to the app I need to do final work in (be it a presentation, a formal report, or whatever).
I can certainly recommend the Mac version. Very cool app.
